ALOO PARATHA

Ingredients:

For Dough
  • Wheat Flour                            :   3 Cups
  • Salt                                          :   1 tsp
  • Oil                                           :   4 tbsp
  • Water                                      :   Around 300 ml
For Stuffing
  • Potatoes                                   :   8  (Cooked in Pressure cooker for 4                                        
  •                                                           Whistles. Remove the skin of potatoes &     
  •                                                            grate the Potatoes on a grated to get a
  •                                                            smooth & mashed potatoes)
  • Green Chillies                          :   4
  • Ginger                                      ;   1 inch
  • Garlic                                       :   10 to 15
  • Coriander                                :    ½ cup finely chopped
  • Haldi (Turmeric)                     :   1 tsp
  • Red Chilli Powder                  :    1 tsp
  • Amchur (Dry Mango Powder) :    1 tsp
  • Chaat Masala                          :    1 tsp
  • Garam Masala                         :    1 tsp
  • Dhania Jeera Powder               :    1 tsp
  • Salt to taste
Method:
  • In a Pan – add Oil, Ginger-Garlic-Green chillies paste, Turmeric, Red Chilli Powder, Dhania-Jeera Powder, Amchur – Chat Masala – Garam Masala – Mashed/Grated  Potatoes & finely chopped Coriander. Our Potato Mixture is ready.
  • Divide the dough into small equal balls.
  • Apply some dry wheat flour and roll it into a medium sized roti
  • Stuff the above roti with Potato mixture .Close the ends of the roti by collecting all the corners of the roti into at the centre, and again roll the roti into a medium sized Paratha
  • Heat a Tava / Non stick Pan.  Place the Paratha on it.  Drizzle some oil on the paratha and spread it evenly on the Paratha.
  • Cook Paratha on a medium flame till you see Brown spots on the Paratha
  • Flip the Paratha on the other side and cook till brown spots are seen on the paratha
  • Serve this Hot Paratha on a plate and serve with Curds ( Yoghurt ) and pickle.
