LEMON RICE (Pulihara)

Preparation Time :  30 Minutes
Serving                  :  6

Ingredients:

  • Rice                                     :  250 gms
  • Chana dal (Bengal gram )   :  25 gms (soak in water for 2 hours)
  • Peanuts                                :  100 gms (dry roast on pan & peel of the skin
  • Red Chillies                         :  10
  • Green chillies                     :  10
  • Adrak (Ginger)                  :  50 gms
  • Haldi (Turmeric)                :  2 tsp
  • Oil                                      :  200 ml
  • Salt                                    : as per taste
  • Urad dal (Black gram)       :  50 gms
  • Rai (Mustard seeds)           ;  1 tsp
  • Heeng (Asafoetida)             :  ½ tsp
  • Curry Leaves                     : 15 to 20
Method:

  • Wash Rice and add 2 cups of water and cook in a Pressure cooker for 3 whistles. After cooker cools down remove the rice from the cooker and spread it on a big plate.
  • Soak chana dal in water for 2 hours
  • Dry roast Peanuts and remove the skin
  • Take Oil in a Pan and add soaked chana dal and fry for 2 mins. and spread this chana dal on the cooked rice placed in a big plate.
  • Again in the same pan – add 2 tsp oil, urad dal, mustard seeds, asafetida (heeng), green chillies, dry Red chillies, ginger crushed or cut into small pieces and turmeric.
  • Now add roasted Peanuts and  curry leaves.
  • Pour all this tadka (Tempering) on the above rice
  • Take 2 tsp salt in a small bowl and add lemon juice.   Add this to the above rice and mix well.
  • Lemon Rice (Pulihara ) is ready to serve !!!
