LEMON RICE (Pulihara)

Ingredients:
- Rice : 250 gms
- Chana dal (Bengal gram ) :
25 gms (soak in water for 2 hours)
- Peanuts : 100 gms (dry roast on pan & peel of
the skin
- Red Chillies : 10
- Green chillies :
10
- Adrak (Ginger) :
50 gms
- Haldi (Turmeric) :
2 tsp
- Oil :
200 ml
- Salt : as per taste
- Urad dal (Black gram) :
50 gms
- Rai (Mustard seeds) ;
1 tsp
- Heeng (Asafoetida) :
½ tsp
- Curry Leaves : 15 to 20
Method:
- Wash Rice and add 2 cups of water and cook in a Pressure cooker for 3 whistles. After cooker cools down remove the rice from the cooker and spread it on a big plate.
- Soak chana dal in water for 2 hours
- Dry roast Peanuts and remove the skin
- Take Oil in a Pan and add soaked chana dal and fry for 2 mins. and spread this chana dal on the cooked rice placed in a big plate.
- Again in the same pan – add 2 tsp oil, urad dal, mustard seeds, asafetida (heeng), green chillies, dry Red chillies, ginger crushed or cut into small pieces and turmeric.
- Now add roasted Peanuts and curry leaves.
- Pour all this tadka (Tempering) on the above rice
- Take 2 tsp salt in a small bowl and add lemon juice. Add this to the above rice and mix well.
- Lemon Rice (Pulihara ) is ready to serve !!!
