Potato Curry for Masala Dosa

Preparation Time :  30 Minutes
Serving                  :  6

Ingredients:
  • Potatoes                              :   8  (Boiled, Peeled & Cubed)
  • Onions                                  :   4  (cut Lengthwise – Long)
  • Lemon                                    :   1 (Lemon Juice)
  • Tomatoes                            :   2  Finely chopped
  • Curry Leaves                        :   8 to 10
  • Ginger                                 :  1 inch (crushed)
  • Corriander                          :   1/4th cup
  • Turmeric (Haldi)                   :  1 Tsp
  • Green chillies                         :  3 to 4 finely chopped
  • Dry Red chillies                    :  2
  • Mustard seeds                      :  1 tsp
  • Urad dal                               :  1 tsp
  • Chana dal                            :  2 tsp
  • Cumin seeds                         :  1 tsp
  • Cashew nuts                         :   15 to 20
  • Salt to taste
  • Oil                                        :   3 tblsp
Method:
  • In a pan – take 3 tsp oil.  When the oil becomes hot add 2 Red chillies . Then add Chana Dal….Fry for 2 mins. when it turns golden brown…add urad dal.
  • Add Mustard seeds, Cumin seeds,Heeng, crushed ginger, green chillies – fry for 2 mins. Then add Cashew nuts. Fry for 2 mins till it turns slightly brown in colour. 
  • Add Onions – Mix it well and add salt as per your taste & Turmeric (Haldi).
  • Now add boiled & cubed potatoes. Mix well.  Cover the pan & cook for 5 mins. After 5 mins, remove the lid – add 1 tsp Lemon juice.
  • Garnish with coriander & our Potato  Curry for Masala Dosa is ready to serve  !!!
