ALOO KI SABZI – ALOO TAMATAR KI SABZI
Ingredients:
• Potatoes : 6
• Tomatoes : 3
• Ghee : 2 tbsp
• Oil : 2 tbsp
• Salt as per taste
• Red Chilli Powder : 1 tsp
• Kashmiri Red Chilli Powder : 1 tsp
• Haldi (Turmeric) : 1 tsp
• Garam Masala Powder : 1 tsp
• Dhania Jeera Powder : 1 tsp
• (Coriander & Cumin Powder)
• Heeng (Asafoetida) : ½ tsp
• Jeera (Cumin seeds) : 1 tsp
• Kasuri Methi : 1 tsp
• Ginger Garlic Paste : 1 tsp
• Dry Red Chillies : 3
• Tejpatta (Bay Leaves) : 3
• Dalchini (Cinnamon) : 1 inch piece
• Elaichi (Cardamom) : 5
• Cloves : 5
• Pepper : 10 to 12
• Water
Method:
• Boil the Potatoes in a cooker upto three whistles. Peel off the skin and cut the potatoes into small pieces.
• Take all the pieces of potatoes in a bowl and mash them .
• Boil the tomatoes , after it cools down, grind them in a mixer/grinder and make Tomato Puree
• Heat a Pan. Add Oil, Ghee, Dry Red Chillies, Heeng, Jeera, Tejpatta and all other dry spices viz. Dalchini, Elaichi, Cloves and Pepper.
• Then add Turmeric, Red Chilli Powder, Kashmiri Red Chilli Powder, Dhania Jeera Powder, Kasuri Methi (crushed) , Tomato Puree & Salt. Cook for 5 mins on low flame. Add Garam Masala and Coriander.
• Our Aloo Ki Sabzi or Aloo Tamatar ki Sabzi is ready to serve. Garnish with Coriander and serve with Puris….!!!
