UTTAPAM – MINI UTTAPAM RECIPE II उत्तपम II BY VIJAYALAKSHMI II

UTTAPAM – MINI UTTAPAM RECIPE 
Ingredients:

• Rice : 2 Cups
• Urad Dal : 1 Cup
• Fenugreek seeds : 1 tsp
• Water :
• Oil for cooking
• Onions : 2 thinly sliced
• Tomatoes : 3 finely chopped
• Capsicum : 1 finely chopped
• Green Chillies : 4 finely chopped
• Coriander : ½ cup
• Sambhar Powder : 1 tsp
• Red Chilli Powder : 1 tsp
• Salt to taste
• Baking Soda : 1 tsp

Method:
• Soak 2 cups of Rice & 1 cup of Urad Dal in water for 6 to 8 hours or overnight. Then grind them to a smooth paste by adding water little by little. Add 2 tsp of Salt to this batter and Keep it aside for 10 to 12 hours to ferment. 
• After 12 hours , mix this batter and add 1 tsp of Baking Soda and mix well
• Heat a Non stick Dosa Pan / Tawa
• Sprinkle some water on the Pan and check if the Pan is hot enough to make Uttapam
• Pour one Laddle /Big Spoonful of batter on the heated Pan/ Tawa.
• Sprinkle some Red Chilli Powder and Sambhar Powder
• Then add/spread some chopped Green Chillies, Capsicum (optional) , Onions, Tomatoes and Coriander
• Drizzle a spoonful of oil, cover the pan with lid and cook on low flame for 5 mins. 
• After 5 minutes remove the lid and flip the Uttapam on the other side. Drizzle 1 tsp of oil on the other side also. 
• Similarly make small / Mini Uttapams on Mini Uttapam Tawa.
• Our Uttapam and Mini Uttapams are ready to serve !!!

• Serve Uttapam with Sambhar, Coconut Chutney and Tomato Chutney
