MILK POWDER BARFI:
Ingredients:
• Milk Powder (Amul) : 4 cups (500 gms)
• Powdered Sugar : 1 cup
• Elaichi Powder (Cardamom Powder) : 1 tsp
• Fresh Cream : ½ cup
• Milk : 1 cup
• Ghee (clarified butter) : 5 tbsp
• Kaju (Cashewnuts) : 15 to 20 (cut into small pieces)
• Badam (Almonds) : 8 to cut (cut into small
Pieces)
• Pista (Pistachios) : 15 to 2 cut into pieces
• Rose water : 1 tsp
Method:
• Grease a plate with 1 tsp ghee (clarified butter) .
• Heat a Pan and 5tbsp of Ghee. When the Ghee melts, add milk . Mix well.
• After a minute, add Ghee and continuously keep stirring on a low flame.
• Then add fresh cream to it. Mix well and let it cook on low flame.
• When it starts forming into a lump, now is the time to add powdered sugar, Elaichi Powder (Cardamom powder) and Rose water.
• Stir continuously and cook on a low flame for about 10 mins.
• We will now test the barfi mixture by taking one small portion on a plate. Apply a pinch of ghee to the mixture. If the small portion of mixture can be rolled into a small round ball, then our barfi mixture is ready.
• Switch off the gas flame and pour the mixture on the greased plate.
• Spread it evenly with a flattened spoon and flatten it with the back of the spoon.
• Now add pieces of pistas (pistachios), Kaju (Cashew Nuts ) and Badam (Almonds).
• Press with the help of the spoon so that all the dry fruits are incorporated in the barfi very well. Allow the mixture to cool for 2 hours. You can also cool the barfi mixture by keeping the barfi tray in Refrigerator.
• After the mixture is cooled for 2 hours, we will now cut the burfi into small square pieces. ( Before cutting the burfi mixture , we will heat the knife, so that the cutting becomes easy) .
• We can break/cut the burfi into 2 pieces and see that the texture of barfi is very good.
• Our Milk powder Barfi is ready !!!
