ALOO PAKORA RECIPE - ALOO BHAJIYA - CRISPY POTATO FRITTERS II आलू के पकोड़े II BY VIJAYALAKSHMI II

ALOO PAKORA – ALOO BHAJIYA – (CRISPY POTATO FRITTERS )

Ingredients:
• Potatoes : 6
• Besan / Gram Flour/Chick Pea Flour : 2 Cups
• Rice Flour : 4 tbsp
• Haldi (Turmeric Powder ) : 1 tsp
• Red Chilli Powder : 1 tsp
• Jeera (Cumin Seeds) : 1 tsp
• Ajwain (Carrom Seeds) : ½ tsp
• Baking Soda : ½ tsp
• Salt (as per taste)
• Green chillies : 3 (crushed)
• Ginger : ½ inch piece finely crushed
• Coriander : ½ Cup
• Oil (for deep frying)
• Water : 3 Cups
Method:
• In a big bowl take all ingredients – Besan, Rice Flour, Haldi, Red Chilli Powder , Jeera, Ajwain, Baking Soda, Salt, Green Chillies paste, Ginger paste and Coriander. Mix well. 
• Now add water slowly, little by little to make a batter of flowing consistency like Dosa Batter. 
• In a deep bottomed Kadai / Frying Pan heat up oil. Add 1 tbsp of hot oil to the above batter. Mix well and keep it aside.
• Peel off the potatoes and cut them into thin slices either with knife or with a slicer. Wash the thinly cut potato slices. 
• Take water in a bowl. Add salt to it. 
• Now keep all the washed and sliced potatoes in this bowl. 
• When the oil in the Kadai/Pan is hot….dip one slice of potato in the Batter and deep fry on low to medium flame till golden colour on both sides. Flip the Aloo Pakodas or Bhajias after two mins. Similarly deep fry all the Potato slices one by one .
• Our Aloo Pakoras or Bhajiyas are ready !!!
• Serve them with Tomato Ketchup/Sauce and Green Coriander & Mint chutney.
