GUJARATI THEPLA RECIPE – METHI THEPLA II मेथी थेपला II BY VIJAYALAKSHMI II

GUJRATI THEPLA RECIPE – METHI THEPLA 

Ingredients:

For Dough
• Wheat Flour : 4 Cups
• Methi (Fenugreek Leaves) : 2 Cups finely chopped
• Green chillies & Garlic Paste : 1 tsp
• Til (Sesame Seeds) : 1 tsp
• Heeng (Asafoetida) : ½ tsp
• Red Chilli Powder : 1 tsp
• Kashmiri Red Chilli Powder : 1 tsp
• Ajwain (Carrom seeds) : 1 tsp (crushed)
• Garam Masala : ½ tsp
• Haldi (Turmeric) : 1 tsp
• Dhania Jeera Powder (Coriander & Cumin powder) : 1 tsp
• Curds : 1 Cup
• Salt : 1 tsp
• Oil : 2 tbsp to add to dough & about 10 to 12 
• tsp for making Methi Theplas
• Water : Around 300 ml 
Method:
• In a Big Bowl take Wheat Flour, Methi, Green chillies and Garlic paste, Til (Sesame seeds), Heeng (Asafoetida) , Red Chilli Powder, Kashmiri Red Chilli powder , Ajwain (Carrom Seeds), Garam Masala, Turmeric, Dhania Jeera Powder (Coriander & Cumin Powder), Curds, 4 tsp Oil .
• Mix well . Add little water and knead it to a medium dough (Not very soft or not very hard dough). 
• Cover the batter and keep aside for 15 to 20 mins. 
• After 20 mins, take a lemon sized dough and make small balls of the dough. Apply some oil to the dough and keep it aside.
• Take a small ball of the dough, flatten it, dust it with some dry wheat flour and then roll it like a Roti with a rolling pin into thin Thepla. 
• Heat up a Non-stick Pan / Ordinary Pan
• Place the above thepla on Non-stick Pan / Ordinary Pan
• Apply 1 tsp oil on the upper side of the Thepla. Spread oil with a flat spoon on all sides of Thepla. 
• When you see brown spots on the lower side of the Thepla, flip it on the other side. 
• Apply 1 tsp of oil on the upper side of Thepla. 
• When you see brown spots on the lower side of the thepla, flip the thepla and our Thepla is ready to serve.
• Serve it with Lemon pickle and curds.
