TOMATO CHUTNEY – FOR IDLI – DOSA & II टमाटर की चटनी II BY VIJAYALAKSHMI II

TOMATO CHUTNEY – FOR IDLI – DOSA & UTTAPAM 

Ingredients:

• Tomatoes : 4
• Onions : 2
• Oil : 2 tbsp
• Ghee : 2 tbsp
• Rai (Mustard seeds) : 1 tsp
• Jeera (Cumin seeds) : 1 tsp
• Dry Red Chillies : 5 to 6 
• Methi (Fenugreek seeds) : ¼ tsp
• Ginger : 1 inch piece (finely chopped/crushed)
• Garlic : 8 to 10 pieces (finely chopped)
• Tamarind : Lemon sized ball
• Cashewnuts (optional) : 8 to 10
• Dalia : 2 tsp
• Curry Leaves : 8 to 10 leaves
• Heeng (Asafoetida) : ½ tsp
• Jaggery (optional) : small piece
• Haldi (Turmeric) : 1 tsp
• Salt to taste
• Coconut (grated) : 2 tsp or ½ cup
• Urad dal (split black gram) : 
• Water to grind the chutney
Method:
• In a Pan – add Oil, Mustard seeds , – when the mustard seeds crackle add Cumin seeds, Dry Red chillies , Fenugreek seeds, Ginger, Garlic, Tamarind, Cashewnuts (optional), / Dalia, Curry Leaves, Asafoetida (heeng) and Onions.
• When the Onions becomes soft & translucent add Tomatoes and cook till the tomatoes become soft,.
• Then add Jaggery (optional), Turmeric, Salt & Grated Coconut. 
• Cover and cook and simmer for atleast 20 mins. Let it cool down.
• When it cools down , add all these ingredients to a blender / mixer , add little water , cover with the mixer lid and grind/blend it into a smooth paste. 
• Our Tomato Chutney is ready !!!
For Tempering : 
• Heat Oil in a small Pan, add Ghee – Mustard seeds, Dry Red chillies, Mustard seeds, Urad Dal, Asafoetida, Curry Leaves. 
• Pour this tempering on the above Tomato Chutney
Our Tomato Chutney is ready to serve !!! 
Serve it with Idlis, Dosa or Uttapam…..
